squash with cookie toppings
|1||butternut squash (cubed)|
|5||amaretti cookies ((or other small vanilla cookies))|
mix the butter, brown sugar, and amaretto, and put it together with the squash and salt in a microwave safe dish, cover and microwave on high for about 8 minutes (until the squash is smooth and not chunky when you mash it).
Mash it all together, and put it in a cassarole dish.
You can make it ahead and leave it at this stage if you want.
Smash up the cookies and put them on top. Heat in the oven about a half hr at 325 or 350 (this is just to warm it through).
